Dom Pérignon uses the word ‘Plénitude' to describe the moment at which a Champagne reaches its radiant apex - a window that occurs three times during the wine's life. The second Plénitude, or P2, as it's labelled here, occurs upwards of 15 years into maturation; the chef de cave carefully monitors the wine, releasing it to customers only when the moment is right. For the 2003 vintage, this second Plénitude is now, so expect a tactile and vibrant wine that dances through floral and fruity notes to the toasted, ashy minerality that defines Dom Pérignon.
